Waterless cookware is designed to cook food using its own moisture, which can result in richer, more flavorful dishes while retaining nutrients. Here's a simple recipe for a waterless vegetable soup using your cookware:

Waterless Vegetable Soup Recipe

Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, diced
  • 1 cup celery, sliced
  • 1 zucchini, chopped
  • 1 can (15 oz) diced tomatoes, with juice
  • 1 can (15 oz) vegetable broth or water
  • 1 cup green beans, chopped
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Preheat the Platinum 12 QT : Place your waterless cookware on medium-low heat. Preheat your pan & you can add a thin layer of oil.

  2. Sauté aromatics: Add the diced onions and garlic to the pan. Stir occasionally and cook until softened and aromatic, about 3–4 minutes. Avoid using high heat to preserve the nutrients.

  3. Add vegetables: Add the carrots, potatoes, celery, zucchini, and green beans. Stir them together. These vegetables will release moisture during cooking.

  4. Add liquids and seasonings: Pour in the diced tomatoes (with their juice), vegetable broth or water, corn, dried basil, thyme, and a bay leaf. Stir well to combine.

  5. Cover and cook: Close the lid of the cookware, and let the soup simmer over low heat. The vegetables will cook in their own moisture. Cooking should take about 30–40 minutes. Periodically check the soup to ensure it doesn't dry out. If needed, you can lift the lid quickly and give it a stir, but avoid leaving it open for too long.

  6. Season to taste: After the soup has cooked, remove the bay leaf and taste for seasoning. Add salt and pepper as needed.

  7. Serve: Ladle the soup into bowls and enjoy!

Tips:

  • Don't add extra water: The beauty of waterless cooking is that the food releases enough moisture, so adding extra liquid isn't necessary unless you want a thinner soup.
  • Stir occasionally: To ensure everything cooks evenly, stir the ingredients once in a while, but try to keep the lid on most of the time to lock in the heat and moisture.
  • Substitute vegetables: Feel free to swap in any vegetables you have on hand, like spinach, peas, or parsnips.

This method creates a nutritious and hearty soup without the need for a lot of liquid, while the natural flavors from the vegetables shine through!
